She landed a job as an executive director of sports at Dynamic Cable located in Coral Gables Florida while she was an undergraduate student. Additionally, she worked for Dynamic Cable from 1984-1986 for two full years. During this period she was also a part of the team for water skiing at the University of Miami. When she moved to New York City, Plaza studied at the Tisch School of the Arts at New York University and attended improv class in The Upright Citizens Brigade Theatre. She graduated in 2006 with a master's degree in production of television and film. Following her graduation from high school, she relocating to New York City, where she took improv classes in the theatre of Upright Citizens Brigade. In addition, she was a film and TV production student at the Tisch School for the Arts. She graduated in 2006.
